How long should you leave a cake in the pan to cool?
I baked a yellow cake yesterday (but I put a bit of food coloring in it, although I don't think that changes things much) and let it cool in the pan for a good twenty minutes, but when I went to take it out and transfer it to a cooling rack, it was still really moist outside and just...fell apart.
Depending on the size of the cake, between 10 and 15 minutes ought to do it. If your cake was "still really moist" on the outside when you took it out, you may have waited too long. It sounds like condensation (condensed water vapor from the steaming hot cake) may have formed on the sides of the pan, which the cake absorbed, causing it to become spongy and moist, and to crack when you removed it from the pan.
Also, it will help if you are using a cake pan that is a flat, regular shape. Using bundt pans or shaped cake pans can make it difficult to remove the cake from the pan if you are not very familiar with the recipe and texture of your cake.
