Easter Sunday is a religious holiday on the first Sunday following the first full moon after the spring equinox, which occurs around March 21st. It is the day Christian all over the world celebrate the resurrection of the Lord Jesus Christ. However, many traditions associated with this holiday, such as the Easter bunny, egg hunt, and Easter baskets, are observed by Christians and non-Christians alike. The name of the holiday, "Easter", came from the pre-Christian Anglo-Saxon goddess named Eostre. She was the goddess of fertility and springtime. Since the rabbits and hares reproduce frequently with a litter per month, the pre-Christian Anglo-Saxons believed the rabbits and hares were the earthly incarnation of Eostre. Hence, the rabbits and hares became fertility symbols. Similarly, eggs were symbols of fertility and life. Eggs were colored, blessed and eaten at spring festivals in ancient culture. When the Anglo-Saxons were converted to Christians, their springtime festival, which occurred on spring equinox, was combined with the Christian observance of the resurrection of Jesus and given the name Easter.
The bunny as an Easter symbol appears to have its origin in Germany, where it was first mentioned in German writings in the 1500s. The first edible Easter bunnies were made in Germany during the early 1800s. According to a German legend, a white hare would leave baskets filled with candies, brightly colored eggs and other goodies for good children on Easter morning. The Easter bunny was introduced to American folklore by the German immigrants. The children would build their nest in hidden places in their home, or outdoors. Easter bunny would fill their baskets with colored eggs if they were good. By the 1800s, candies were commonly tucked into the baskets as well. Nowadays, Easter baskets are commonly filled with chocolate eggs, chocolate bunnies, candies, and marshmallow Peeps. The jelly beans have also been added to the baskets since 1930s because they look similar to eggs laid by birds.

Looking for an italian dessert for Easter?
My aunt recently passed away, and she was from the region of Abrruzzo Italy.....At Easter she would make an easter cookie that was shaped in a half moon pocket....The dough was soft and lemony, and the inside was filled with ricotta....we called them "fit-in-jill" (best way to pronounce them) not sure how they are spelt in italian. There was nothing crunchy or fruits in the ricotta.....Just a pocket full of yummy!! If anyone has heard of these....or has a different name for them....It would be greatly appreciated....recipe would be incredible!!!!

Per la pasta:
350gr. di farina
200 gr. di burro
2 uova
1/2 bicchierino di liquore D'anice
sale
Per il repieno
250gr. di ricotta fresca
80 gr. di zucchero
50 gr. di uvetta
2 uova
1 limone
1/2 bicchierino di rum
Per la teglia
olio extravergine d'oliva
Disponete la farina a fontana sul piano da lavoro e nell'incavo rompete le uovae aggiungendo un pizzico di sale ,il liquore d'anice e il burro sciolto (tradizionalmente si utilizza lo strutto e percio se la cosa non ve disturba, impiegatelo al posto del burro). Lavorate l'impastoil meno possibile, limitantovi ad amalgamare gli ingredienti, quindi fate una palla, sistemandola in una terrina e copritela con un piatto . poi lasciatela in frigorifero per circa 1 ora .
Nel frattempo preparate il ripieno. lavate l'uvettae lasciatela in ammollo in un po d'acqua e intanto passate la ricotta al setaccio e lasciatela cadere in una terrina , unitevi un uovo intero , un tuorlo a la scorza grattuggiata del limone . Strizzate l'uvetta e incorporando al composto, aggiungendo
anche lo zucchero e il rum , poi mescolate con cura.
Trascorso il tempo previsto, togliete la pasta dal frigorigero e utilizzando un matterello infarinato ,tirate una sfoglia non troppo sottile , Servendovi tdo un bicchiere capovolto ricavate quindi dei dischetti e su ciascuno di essi collocate un un po ' di impasto di ricotta . Ripiegate ogni dischetto a
mezzaluna e inummiditene la superficie usando un pennellino imbevuto nell 'albume d'uovo precedentemente non utilizzato e leggermente sbattuto . Disponete infine i dolcetti su una teglia unta d'olio e cuoceteli per circa 30 minuti nel forno preriscaldato a 180 C
