Cambridge Chilli Farm Jams and Jellies

With an array of preserves to its name despite only starting in October 2008, Cambridge Chilli Farm is a brand that we love more and more. Here are some of its chilli treats available at the Devil's Garden:

An inspired and truly special chilli jam is Cambridge Chilli Farm Habanero Gold Chilli Jam. Everybody should have this chilli jam at home. Chilli jams usually have a tomato-ey base or are chilli pepper dominant of course but Cambridge Chilli Farm's Habanero Gold Jam is a cross between a traditional fruity jam and a chilli based one.  Mild enough for children to enjoy this is a chilli jam we cannot get enough of, first because it goes with absolutely anything sweet or savoury but also because the flavour of our beloved habanero chilli pepper shines through with a pleasant aftertaste of apricots.

Cambridge Chilli Farm Raspberry & Chilli Jelly is not your average sickly jelly infused with chemical raspberry flavour.  Cambridge Chill Farm prides itself in sourcing the best ingredients for its chilli produce and it shows in this spectacular Raspberry Chilli Jelly. Only four ingredients are to be found here: heaps of succulent raspberries, sugar, apples and the cherished habanero chilli pepper. All these components have cleverly been balanced to form a chilli jelly with a deep sweet taste and a gloriously red colour. The heat is relatively mild so this is perfect for breakfast with the kids or a naughty spoonful before going to bed!

We have been known to empty a jar of Cambridge Chilli Farm Lime & Chilli Jelly in minutes it's that good!
Cambridge Chilli Farm's Lime & Chilli Jelly is just sweet enough and has that distinctive flavour of lime without being bitter. Of a dazzling golden colour the gentle heat of this jelly comes from the fragrant habanero chilli pepper. Tim, the owner of Cambridge Chilli Farm advised us to put a spoonful into warm couscous or rice and it really worked! We also love to spread some on fish or vegetables as it will slowly melt during cooking, therefore acting as a sort of quick marinade.

We thought we had seen it all but Cambridge Chilli Farm's Nagalade floored us in seconds! Three ingredients are enough to make this chilli jelly: Bramley apples, sugar and three shredded Naga morich chilli peppers per jar. Of an alluring dark golden colour this chilli jelly which some people consider to be more of a marmalade will last you as only a spoonful is enough as a glaze for a whole roasted chicken. The flavour is amazing though and an absolute treat to those partial to the famous naga chilli pepper.

The great thing about chilli jams and jellies is that since the flavour is more concentrated than a typical chutney you can keep this in your fridge for months and use only a little at a time as you see fit.

Is it possible to replicate the heat in Chilli's and if so how?

When you pick a chilli off the bush it contains a heat different to that of heat from a fire as we know. Is it possible to replicate this heat and then place it in foods rather than using chilli as the heat ingredient?

The "hot" part of a chili is known as capsaicin. You can buy solutions of just capsaicin and vegetable oil. That way you're adding only heat and no actual taste.
