HELP! ACCIDENTALLY MADE WEDDING CAKE 1 WEEK AHEAD!?
so,
the wedding was on MY calendar on july 11 for 2 months now, and only did I find out after I made the cake, is that it is on the 18th!!!!!!!!
I made a vanilla sponge with buttercream (1/4 shortening, 3/4 butter and icing sugar). coffee syrup, and rolled fondant (dawn brand).
There are also edible pearls, royal icing and ribbon on the cake.
I called a wedding cake shop and they said to put a plastic bag over it, NOT plastic wrap, and keep it in the fridge till next weekend.
If someone else has OTHER suggestions, please let me know!!
When should I check to see if its soggy or cracked, so to give me enough time to redo the fondant if necessary?

If you are using buttercream underneath the fondant frost with now and add the fondant later. You can remoisten the buttercream just before adding the fondant by usind a water moistened spatula so it will be sticky again. Or you can use jelly to seal in the moisture. I rarly used rolled fondant( I find it tasteless) but did use a poured petite four frosting under the buttercream or seven minute frosting. It holds the moisture as well as being an effective "crumb hold"
