Chunky Vegetarian Borscht
This week, we not only went seasonal with our cooking , but we went ahead with some shared Eastern European ethnic food roots. If you don't know, borscht is a beet soup traditionally made throughout Eastern Europe. I have plenty of not-so-fond memories of my father chowing down on some cold borscht topped with sour cream, which during my childhood seemed incredibly strange and gross.
This borscht recipe is great for the wintertime because it features so many hearty winter root vegetables. Of course, the star in this recipe is beets. I love the sweet earthy taste of beets, and this dish permeates with that flavor. A traditional Russian borscht recipe uses beef shank and beef broth, but this version of vegetarian borscht uses vegetable stock.
As I found out during cooking, there's a lot of variation in terms of how a borscht recipe is made. Traditionally a borscht is just the resulting broth made from beets and the other ingredients, but we left the vegetables in to make it heartier and more filling. I remember my dad's cold broth with sour cream, but my friend grew up eating it warm with dumplings. Like I said, it's not the most authentic Russian borscht recipe, but the both of us were satisfied that the recipe achieved an authentic flavor.
Chunky Vegetarian Borscht
Ingredients:
- 2 bunches beets, about 6 beetroots in total
- 1 quart low sodium vegetable stock
- 1 large white onion, diced
- 1/2 bunch celery, chopped
- 6-8 carrots, chopped (I used purple carrots, but any carrot will do)
- 2 bay leaves
- 1/2 cup vinegar
- 3-4 cloves garlic
- 2 tablespoons honey (or more to taste)
- 2-4 tablespoons spicy brown mustard (or more to taste)
- 2 rosemary springs
- 1-2 pinches salt
- Black pepper, freshly cracked
- Dried thyme, to taste
Instructions:
- Pour the vegetable stock in a large pot on high heat. Once it starts boiling, turn down the heat to low and add the onion, celery and carrots.
- Process the beets. Start off by chopping off the greens on top and the long dangling bit on the end. I like to save the beet greens for cooking. Then, peel the beets. I like to just go at them with a peeler, but this can be tricky. For an easier skin removal method, par boil them and then run the beet under cold water. You can then scrub off the skin.
- Cube the peeled beetroots and add to the pot. Add the bay leaves and simmer.
- Once the beets, carrots and celery are almost tender, add the garlic, vinegar, honey, brown mustard and rosemary.
- Once the borscht is almost done, add the salt, pepper and thyme to taste. Serve and enjoy.
Notes: If you've never made any fresh beet recipes before, then be forewarned that lots of things will be stained red during the process. My hands and dishes were bright red afterward, but it all washes off so don't worry. I kept the color of the soup intact by using purple carrots that I found at my local health food store, but I think regular carrots would work just as well in this beet recipe. The soup came out much spicier than a traditional Russian borscht recipe, but it still wasn't nearly as spicy as most of my other dishes. I think next time we make this borscht recipe we will add dill, horseradish and potatoes to add even extra flavor and heft. Either way, I'm pretty excited to help myself to seconds for lunch today!

I purchased it about three months ago from Chef'n but cannot find it anywhere. My 3 yr old daughter broke it with the door hinge (don't ask) and I need need need another one. It works brilliantly, much better than the silicone rolls. If anyone knows how or where to purchase another one please let me know. Personally, I am not sure why it would be hard to find as everyone should have one. It is that good!!
