Large Casserole
Texas Style Sausage Casserole
Ingredients
2 c. chicken, cooked and diced
1 lb. mild pork sausage
1 c. celery, thinly sliced
3 bunches green olives, sliced
1/2 lb. fresh mushrooms, sliced (canned ones can be used)
2 cloves garlic, finely minced
2 cans cream of mushroom soup
2 cans cream of chicken soup
2 - 3 c. chicken broth
1/2 c. wild rice, uncooked
1 c. long grain rice, uncooked
1 tbsp. worcestershire sauce (add to soup mixture)
1/3 c. port wine (add to soup mixture)
Preparation
Cook the long grain rice according to directions. Cook the wild rice about 45 minutes after washing it well. Drain both rices and mix together. Cook sausage in frying pan until done; drain grease.
Combine both soups and then add chicken broth until medium sauce is attained. Saute in small amount of margarine the celery, garlic, onions and mushrooms until tender crisp. In a large casserole dish, layer the rices, chicken, sausage, vegetables and soup mixture.
Top with homemade bread croutons (see below) and bake at 350 degrees for about 45 minutes or until croutons are lightly tanned and casserole is bubbling around the edges.
HOMEMADE BREAD CROUTONS
Melt 1/2 cup butter or margarine in pan. Add 3 slices of bread that have been cut into crouton-sized pieces. Stir these together and mix until all pieces are moist with butter. Spread the croutons over the casserole and bake.
Serving Suggestion
This superb Texas Style Sausage Casserole benefits from having a good slab of bread (foccacia is one that you should try) to go with it to mop up any juices. When slathered with butter, the flavor's will just melt in your mouth.

Is it possible to make a casserole from THIS?
I have 1 lb of chicken thigh fillets, those spiral noodles, rice, canned tomatoes, spices of a large variety, mayonnaise, olive oil, bacon, whole milk. I MAY go to the grocery store for onions or whatever but I would really rather not. Any ideas????
Casserole, no. But spaghettis yes. Cut the chicken thigh fillets off the bone and into quarter inch pieces. Place a skillet on the stove screaming hot then add enough olive oil to coat the pan. Season the chicken pieces with some ground seasoning or cumin, a little salt and pepper, galic powder and onion powder if you have. Place the chicken in the skillet until each piece is a lil cooked about 5 minuts with occasional tossing. Then place your heat on low and add your canned tomatoes. Blend your tomatoes. To liquify them or crush them by hand before placing them in the pan. At this point you can add minced onions if you'd like. Cover your skillet still on low heat and let cook for about 20 minutes. If you notice your sauce thickening just keep adding a lil water. At the last 15 minutes boil your spaghetti water and add alil salt to the water b4 adding the noodles. Let noodles cook for bout 6-9 mins, depending how thin they are. Once the noodles are a little undercooked, strained them under cold water to stop the cooking process. Finally add them to your chicken and tomatoe sauce and let them cook together for about 5 mins under low heat so the flavors can marry together. Enjoy with a glass of wine! Bob Appetit!
