Measuring cups
Baking deals with lots of measurements. You have to measure the flour, sugar, salt, baking soda, milk, water and even the oil are being measured. Baking without a measurement instruments could be a tough work.
It is not like a guessing game that you need to do because it might spoil your baking as a result. Let's just say that for now your measurements works for you but how about the next time you need to bake it again. How sure you are that the same taste and the same outcome will be as perfect as the one you made before?
Having a measuring cup that can handle measurements of your dry and liquid mixtures is assuring you that perfect and delectable pastries will be out in no time. A measuring cup usually has a standard 8 ounce unit in measurement. It can be a glass, plastic, or metal. Using clear glass measuring cup is what's best for my opinion. You can see it from the inside that will make your measurement a lot easier. The sizes may vary depending on the recipe book that you are following. Not all recipes just contain one standard sizing or measurement. Make sure to at least get to know your set of measuring cups so that when working on a pastry, you already know which cup you are going to pick up and use.
When the recipe said that it should be a cup of dry mixture it is always level in cups. It doesn't have to be in a heap. It should be level to the opening of the cup. Unlike spoon measurements where you need to be careful in reading the instructions since there are terms to consider like "heap", "rounded" or "flat".
That is one drawback of measuring cups. You should have them in a set. A set of liquid measuring cups and a set for dry ingredients need to be present in a baker's kitchen. Having said that, you need to a lot space where all of your measuring cups are stored all together to avoid them losing piece by piece. Since each one of them are essential so you might want to have them in one container. Once you are done using them, clean and towel dry before storing. Specially in storing metal measuring cups, always have them dry to avoid having them rusted and stained.

You will just have to wing it! Long before the mixer was invented they did it all by hand. and a lot of arm power.
If it were me n I'm not saying it will be perfect but I'd use a regular teaspoon n tablespoon. What other choice would we have. Just level the spoon with a knife or something. As far as creaming the butter n sugar, make sure the butter is at room temp(not melted but set out and softened). Put it in a big bowl you can hold with your arm against your body tightly. Get a heavy duty spoon and fork. Now stir the tar out of it!Start with the spoon to mix it good then change to the fork bet about 5 minutes I'd say you will be abel to tell when its all creamy n no lumps. I don't mean a eating for n spoon I mean a bigger stronger serving fork n spoon. A whisk wont really work well that is kinda thick.
