Mexican Cocktails
Tequila is the star. Make no mistake, it's not a Mexican cocktail without it and it's probably the basic ingredient of the most popular cocktails in the United States today where Margaritaville is alive and well.
But what is tequila? We know it's from Mexico, but did we know that it's North America's first distilled spirit? And that it's been produced in Mexico since the time of the Aztecs – way before the Spanish arrived in the early 1500's. Today, most of the tequila producers are located within a hundred miles of the town of Tequila, in Jalisco State. Some of them still make their tequila using the traditional old methods in their tiny, family-owned fabricas but most are now housed in ultra-modern distilleries. At the last count, there are one hundred and forty two registered distilleries which product over a thousand different brands of tequila. Many of them use Mexican artisans to create those unique hand-blown glass, crystal, ceramic and pottery bottles; which, by the way are becoming very collectible and valuable items.
The name "tequila" may only be used legally by those distilleries which make their product from the blue agave plant. There is no worm! That worm is found only in mezcal and was dropped in there by humanitarians, seeking a glorious death for it! Remember the T-shirts from way back "I Ate The Worm?" Awesome marketing, my friend.
But we digress – back to tequila.
There are five distinct types of tequila for us to examine, enjoy, taste and mix with other stuff.
1. Tequila Blanco/Plata. This is the white or silver tequila, clear as water because it's not aged and bottled right after the distillation process;
2. Tequila Joven/Oro. This one is the "young" tequila and it's made with tequila blanco plus some added color because newly distilled tequila is colorless. Think of Cuervo Gold!
3. Tequila Reposado. Aged or "rested" for less than one year in oak barrels which give it its gorgeous golden color and a smoother texture;
4. Tequila Añejo – aged for more than one year, but less than three – even smoother;
5. Tequila Extra Añejo – aged for over three years in oak barrels which gild it and give it that spectacularly smooth and velvety taste – perfect for your margaritas.
There are thousands of Mexican cocktail recipes on the internet – your Mexican-themed party could last for a month if you made them all in turn. Tequila will not give you a hangover. If you have a vicious hangover it's not from drinking tequila. It's from drinking a lot of tequila! And you would definitely need a hair of the dog (try the Corpse Reviver).
The best loved of all Mexican cocktails are margaritas, followed of course by the Mexican or Tequila Sunrise. And there are hundreds more with names which should not be mentioned in this article; go and look them up online yourself.
Now here's something very different indeed. This is an authentic Mexican cocktail which absolutely showcases the flavor of the tequila (use the good stuff) and which requires two hands to sample it. Mix up a pitcher of these bad boys and invite your friends for a sleep-over.
You will need one bottle of really good tequila – maintained at room temperature.
You will also require the following,
1. freshly squeezed tomato juice from your juicer;
2. half a cup of freshly squeezed orange juice;
3. quarter cup of freshly squeezed lime juice;
4. one small white onion;
5. six small fresh, green chilis (not canned);
6. half a teaspoon white sugar;
7. salt to taste.
Chop and de-seed the green chilis (seeds are very bitter); chop the onion and put them both in the blender together with everything else except the tequila. Blend until smooth, pop it in the fridge and allow it to get really, really cold. This is called "sangrita" which is the perfect accompaniment to your upcoming shot of tequila and more than replaces the ubiquitous trio of salt/lime/tequila. Sangrita means "little blood."
For each tequila aficionado (why would you invite non-ones) pour an icy shot of sangrita and a separate shot of tequila. And here's where the two hands come in – sip the sangrita and then the tequila. See? Easy, isn't it!

the fact is, mexico's independence day is on september 16 which cinco de mayo (literally meaning the fifth of may) is the celebration of defeating the french army from taking over mexico and claiming it as their own
the actual date marks the battle of puebla, a battle in which the mexican army (which consisted of mere farmers and ordinary citizens) suprise attacked the french army and won.
although this did not win it all, it was the turning point in the battle against the french and gave them courage and hopes enough to win it all.
mexico independence day has nothing to do with this. mexico independence day deals with making the spanish colony of mexico into a full blown country.

Did you know that the French Army of Napoleon III that was defeated and kicked out of Mexico had been supplying the American Confederate Army? Had the Mexicans not defeated the French at Puebla, our own Civil War might have gone on for years longer, in all it's bloody horror. I say thank you to the Mexicans for that.
