Basic Spinach Pasta Dough
Yield: 8 Servings
2/3 pk Frozen spinach (10 oz pkg)
4 c All-purpose flour
4 Eggs
Cook spinach according to package
instructions.
Drain thoroughly.

moisture as possible. Chop spinach very fine. Put flour on a pastry
board and make a well in the center. Break eggs into well; beat with

Veggie Flavored Pasta - No Egg
***BASIC INGREDIENTS***
1 cup flour -- all purpose
preferably durum semolina
1/3 cup water
***OPTIONAL INGREDIENTS***
1 tablespoon olive oil -- (optional)
***USE ONE OF FOLLOWING ONLY***
1/4 cup tomato juice -- (for red)
1/3 cup carrot puree -- (for orange)
1/3 cup beet puree -- (for red)
1 cup spinach puree -- (for green)
To make by hand, use a floured pastry cloth, put dry ingredients on cloth, and make a "well" in the center of flour mixture, add liquid ingredients in the well, and knead the dough, working the flour to the center as you knead. After it forms a ball, knead by hand for several minutes. To make with a food processor, put all ingredients in the bowl. Process for 1 minute until dough begins to form. Adjust liquid or flour if necessary, continue to knead in the machine for 1-1/2 to 2-1/2 minutes. To make with bread machine, place ingredients into baking pan. Use the dough cycle, knead for 1/2 min. Adjust flour and liquid to form a round ball of dough. Knead for another 5 minutes, then press stop button. IF YOU HAVE A PASTA MACHINE, CONTINUE ACCORDING TO INSTRUCTIONS. To complete the pasta by hand, roll the dough into sheets, as thin as it is possible to roll it on a floured pastry cloth with a rolling pin. Then shape into long thin spaghetti like strips, or wider for noodles. Cut with a pie crimper for a fancy ed ge and twist into bowknots. Use your imagination. Allow to dry a minimum of 10-20 minutes, or longer, if necessary. It may be dried for several hours, put into a ziploc bag and refrigerated or frozen. To cook, drop into boiling water (with a little salt, optional), and cook just until al dente. Do not overcook. Serve with your favorite sauce. You can make a white pasta, leaving out the vegetables, or you can use your imagination, be creative, and use any number of other veggies. Try green, yellow, red, purple, orange pepper puree; yellow summer squash or zucchini; winter squash, pumpkin or sweet potato; broccoli, green beans, vegetarian refried beans. The list is endless. Just use approximately one-third cup of the one you choose

Turn the dough out onto a work surface and begin to knead. Work dough until it is smooth and elastic, about 10-15 minutes. Wrap dough in plastic and let rest about 45 minutes.
For Rosemary Pasta, add 1 tablespoon fresh rosemary leaves.
LEMON PASTA
3 1/3 c. all-purpose flour
1/2 tsp. salt
2 beaten eggs
1 (6 oz.) can frozen lemonade concentrate, thawed
1 tsp. olive oil or cooking oil
In a mixing bowl stir together 3 cups of the flour and salt. Combine eggs, lemonade concentrate and olive oil or cooking oil; add to flour. Mix well.
Sprinkle kneading surface with the remaining 1/3 cup flour. Turn dough out onto floured surface. Knead until smooth and elastic (8-10 minutes). Cover and let rest 10 minutes.
Divide dough into 3rds or 4ths. On lightly floured surface roll each third of dough into a 16 x 12 inch rectangle or each fourth of dough into a 12 inch square. If using a pasta machine, pass dough through machine until 1/16 inch thick. Dust with additional flour, as necessary, to prevent sticking. Cut and shape as desired. Cook as directed. Makes 1 1/2 pound fresh pasta. May substitute equal amounts of pineapple or orange for different flavors.
3 qt. water
1 tbsp. salt
1 tbsp. cooking oil (optional)
8 oz. pasta
In a large kettle or Dutch oven bring water and salt to a rolling boil. If desired, add oil to help keep large pasta separated. When the water boils vigorously, add pasta a little at a time, so water does not stop boiling. (Hold long pasta, such as spaghetti, at one end and dip the other end into the water. As the pasta softens, gently curl it around in the pan until immersed.) Reduce the heat slightly and continue boiling, uncovered, until the pasta is tender but still slightly firm, a stage the Italians call al dente (to the tooth). Refer to the approximately cooking times given below. Stir occasionally to prevent the pasta from sticking. Taste often near the end of the cooking time to test for doneness.
When the pasta tests done, immediately drain it in a colander. Transfer the cooked pasta to a warm serving dish. Serve immediately. (If necessary to hold the pasta for a short time, drain and return to the empty cooking pan, add 2 to 3 tablespoons butter to prevent the pasta from sticking, then cover pan to keep the pasta warm.) Makes about 4 cups cooked pasta.
BASIC PASTA DOUGH
2 lbs. flour
4 eggs
1/2 tsp. salt
1 c. warm water
Make a well with 3/4 of the flour; add salt and eggs to the well and mix together slowly, adding water as necessary. Knead about 10 minutes; cover and let dough rest for 10 minutes, then knead again until very smooth. This dough is now ready to use: Ravioli, lasagna, fettuccine, cannelloni, etc
