Aluminum kitchen utensils get heated up quickly, is light weight and do not rust. However the catch is that aluminum can react with some acidic foods including egg yolks, asparagus, artichokes etc. Aluminum cookware is ideally suited as pie plates, muffin pans, pasta pots and skillets.
Copper has a very high thermal conductivity; however it is expensive, heavy and might require occasional re-tinting. Cast Iron also is well suited to be used in high temperatures. However it can rust easily and needs seasoning before usage.
Though Stainless Steel is a poor heat conductor, it is mixed with nickel or chromium to enhance its thermal conductivity. It is easy to maintain and retains the shiny look for long. Carbon steel is also used to make cook ware like paella pans as it has a high strength and heat resistance and can made into sheets. However, these do not conduct any heat.
Teflon coated frying pan reduces the chances of food getting stuck to the pan's surface. It is easy to clean and is a popular choice of cookware these days. However care should be taken not to use metal spatula or spoons on the pan as it can damage the coating over the cooking utensil there by making them useless.
Non-metallic cookware designed exclusively for microwave ovens are also available. Ceramics cooking utensils like porcelain are very popular options however these could have high level of lead that could be damaging to the health.
Glass-ceramic that has the properties of both glass and ceramic cookware has thermal shock immunity because of it's near-zero co-efficiency to thermal expansion, which makes it oven safe. Silicone is capable of withstanding high temperatures and is highly flexible and light, which makes it a popular choice as bake ware. Non-metallic cookware must be used only in microwave ovens and are not for the stovetop.

how to season carbon steel pan?
I have a carbon steel paella pan, which I tried to season
I brushed vegetable oil all round the surface, then baked it in the oven for 45 minutes.
When it came out, the pan looks like its been painted with a dark brown fence varnish 
The baked oil surface is really shiny and hard, but blotchy and uneven. What did I do wrong?
I tried scrubbing it all off and starting again, but even with detergent it wont budge.
Allow me to offer you my little antidote !
Many years ago my father pulled a cast iron dutch oven from a river after a flood . It had been there for some time and was quite pitted and rusted . My mother steel wooled and brillo padded it until there was not trace of topical rust . She then thoroughly dried it with a cotton cloth . She then lined the bottom of the oven with foil and place a large baking pan on the bottom rack . With lard she coated the inside and outside of the cast iron . Then baked it at 325 degrees F. until the lard had been cooked off . She cooled the pot and repeated this several times always catching the lard that dripped off and reapplying it . Lard reacts best with the carbon steel that makes up what we call cast iron and is aide decamp to the blackening of it . Oil and butter will not cure it as well or completely and rust will resume it reached destruction of the pot if not used continuously when cured with butter and oil . It must be an animal fat . That is what my Great Grandmother would tell you if she were alive .
I have cast iron pans from my grandmother to this day and I use them continuously . I still have that Dutch oven my mother cleaned and cured . Sometimes it is months between uses , but it never gets a spot of rust . When i use it , not even mac and cheese stick to it !
One little note : never use soap or water to clean your carbon steel . Just wipe clean with a damp cloth and dry immediately .
