Has anyone made the red velvet cake into a large(14" ) tier for a wedding cake?
The bride wants a red velvet cake and I;m not sure if it will hold up as the bottom tier of a stacked(5 tier) cake. I really don't want to do a practice cake of this size, so if anyone has ever done it and if there were any changes that needed to be made to the batter to make it stand up to the pressure of the other tiers ...please let me know.
You can use dowel rods, 6 or 8, placed in a circular pattern.
Place them so that they will be able to support the upper layer. The cake, which will be on a cake board or cake plate, will actually be sitting on the dowel rods. Make sure all the dowel rods are exactly the same height. This process should be repeated for all the layers. This will support the cakes and also make them level. Dowel rods can be purchased at a craft store or through Wilton.
